Distillerie Castan lies northeast of Toulouse, and makes this peated whisky, disgorged from a white wine cask. The nose has pear, apple pie, and vanilla and it's quite intensely spicy with cinnamon, pepper, and eucalyptus. A superb flavor trajectory beginning with sweet lemon bonbons, baked apple, cinnamon, and pepper, then baked orange desserts, ending on a hint of smoke. Lime zest, spices, and mild smoke to finish.
