Sourced grain and double-distilled single malt whiskeys matured in bourbon barrels, then finished in oloroso sherry and peated casks. Aromas take time to open up: lemon frosting, allspice, peat smoke, cookie dough, chocolate chip, new leather, raisins steeped in vanilla extract, and dunnage earthiness. Excellent flavor balance with heather honey, glazed fruit, dried apricot, smoke, clove, marmalade, and more allspice, then a finish of cinnamon cookies and cacao.
