Crater Lake, 40%

Distilled entirely from rye and aged for 2 years, this has a dry, grainy nose of pumpernickel, rye spice, bitter dark chocolate, wood shop, and chai. The palate is light and somewhat spiky with Red Hots, pickled ginger, and toasted grains. The finish adds cinnamon, lemon zest, oak, and subtle floral flavors. It has a decent foundation, but it would greatly benefit from longer aging.
