Matured in refill European oak casks and finished in Pedro Ximénez-seasoned new American oak hogsheads, this is bone-dry on the nose with chestnut puree, dark chocolate, coffee creams, fig roll, and fine oak spices. Quite delicious, with sweetened chocolate fondant cake, raspberry jam, hazelnut praline paste, and gentle peppercorn spiciness, plus hints of espresso and black cherry. A drying finish of supple oak, wood spices, and coffee cake.
