A nose of ground pepper, roasted coriander seed, mustard seed, a hint of paprika, dry peaty earthiness, asphalt on a hot day, pastrami, savory biscuits, and dry grasses. It’s a little austere: peaty rather than smoky. Initially sweet, with chocolate ganache, dried fruits, pepper, and peat smoke, developing some meatiness toward the end, with a finish like a well-done peppered steak.
