Matured in first-fill bourbon barrels, the nose has toffee, vanilla, heather honey, and salty maritime qualities. Add in ground cumin, pencil shavings, green apple, and a spritz of lemon peel, and it’s rather appealing. A sweet hit of vanilla, honey, and spice on the palate, then layers of marmalade, gingerbread, spiced apple, and dry oak, with a lasting finish of fudge sweetness, cinnamon cookies, and ground ginger.
