While High West’s bread and butter is in blending, most often with sourced whiskeys, this high-rye bourbon shines the spotlight on the Utah distillery’s house-made distillate. The nose opens with musty notes of library book and paper bag, swiftly joined by earthier scents of fresh hay, oak spice, and bright zesty orange. Peach rings jump out on the palate, which is soft as a kitten yet bursting with flavor, from maple syrup and cereal milk to cocoa powder and barrel char. The finish delivers sweeter notes of brown sugar and apple crisp.
