High Wire Distilling Co. Jimmy Red Double Oak, 53.5%

Charleston, South Carolina-based High Wire’s take on a double oaked whiskey involved finishing its flagship 100% Jimmy Red corn bourbon in new oak for 14 months. All of that virgin oak pops on the nose, which is drenched with caramelized sugar, vanilla pound cake, and wood spice. Lighter notes of apricot marmalade and raisin follow on the palate, mixing with baking spice, cinnamon syrup, and toasted nuts. A lot of wood, in the form of oak spice and barrel char, is present on the pleasant finish.
