Hirsch The Departure (Batch AHH1024), 49%

Made entirely from Marris Otter barley and fermented using brewer’s yeast from the former Anchor Distilling (now Hotaling & Co.), this is dense and oaky on the nose. There’s toasted oak and freshly cut lumber, along with apples and cinnamon, and a distinct smoki- ness. On the sip it is rich and spiced with Mexican hot chocolate, cola, and cacao nibs. The finish is sweeter, with milk chocolate, apple cider, and pepper.
