A 3-year finish in barrels that previously held table syrup—made from corn syrup, cane syrup, cane molasses, and honey—sounds sickeningly sweet, but there’s a lot to love. The nose is jammy, with cooked cherries, orange peel, cinnamon, almond paste, and spiced rum cake. Black tea and anise on the palate, with cinnamon stick, simple syrup, and toasted nuts taking the spotlight. A very sweet finish—waffles and maple syrup—that’s mingled with spice.
