A double distillery collaboration matured at Mars Shinshu Distillery, this has a clean, fresh, delicate nose of apple, pear, cherry, strawberry, and floral notes, then yuzu, candied lemon, whole nutmeg, exotic woods, and dunnage. Flavors of sweet cherry cake, apple, and brown sugar, then it gets peppery, with clove, chocolate, cocoa, coffee grounds, oak, and old leather.
