A mustiness fills the nose, bringing to mind a dusty attic, old library books, paper bags, sawmill, and the smell of baking bread. As you move to the palate, there’s nice spice, some dried fruit, star anise, maple syrup, and an herbal grassiness that only grows with time, coaxing out black pepper, a sprig of mint, and cooling menthol. The long-lasting finish unearths wood char, making for a fun—if winding—journey.
