Head distiller and blender Donal Farrell finished this whiskey in IPA casks, confirmed by the zested orange, candied lemon, and bitterness on the nose. Add to that some aromas of honey, ground almond, dried grasses, whipped cream, and a grating of nutmeg on crème brûlée. The palate has lemon, orange, pear, apple, and grassiness, with the IPA notes adding that snap of citrus bitterness to end the proceedings.
