Slow Cut is named for Old Elk’s extended proofing process, which the whiskey makers say preserves delicate flavors lost when a whiskey is proofed over the course of days rather than weeks. The nose is inviting and straightforward, with caramel, gooey brownies, and vanilla frosting. On the palate, the whiskey is sweet and gentle, with brown sugar, toffee, and apple pie. The finish is of moderate length with a kick of black pepper and more toffee sweetness.
