Penelope’s Cooper Series showcases unusual cask finishes. This one features amburana oak, a rare species native to South America—hence the name Rio. Unusual but very inviting, with aromas of honeysuckle, raisin, coffee cake, and ripe banana. The palate is cinnamon-dominated and spicy, with rum raisin ice cream and Big Red gum. Mid to short length on the finish but full of flavor. Playful, simple, and delicious.
