Redbreast Lustau, 46%

This is aged for 9-12 years, then finished for a year in first-fill Spanish oak oloroso sherry butts from Bodegas Lustau. The nose has plenty of depth, with baked apple, dates, leather, raspberry jam, cinnamon stick, black licorice, and dunnage earth. Well-rounded flavors of baked citrus, honey, peppery spices, clove, red velvet cake, damson, glacé cherry, and walnut, before it spirals down into a delicious sherry fruit abyss.
