A 4 year old from Tennessee with a mashbill of 80% corn, 10% rye, and 10% malted barley kicks off with a nose reminiscent of a holiday party—pine cones, Christmas spice, and ground cinnamon—plus vanilla wafers and black-and-white cookies; over time, cherries and pear slices emerge. The palate is a tad hot for the proof, but it has solid flavors of vanilla, double-chocolate chip cookies, caramel apple, and baking spices. The finish ties everything in a bow with cinnamon applesauce, oak, caramel, and raspberry coulis.
