This 5 year old 100% rye is bright and herbal on the nose: Cloves, fennel, and savory lemon entwine with gingersnaps, sourdough bread, and lightly bitter citrus. The palate is quite spicy with white pepper, chile flakes, dill, and a mild astringent mint note. With water, dry red fruits and toasted bread rise to the top, revealing the influence of the finishing barrel. The finish lasts long with baking chocolate, barrel char, and burnt toast.
