Waterford Peated Fenniscourt, 50%

Peated to 38 phenol parts per million with Irish peat, this is resolutely smoky, with red apple, pear, rice cake, and floral notes, plus bacon fat, white pepper, and barnyard funk. It’s a soft whiskey initially, with flavors of red apple, brown sugar, malt, ginger root, pepper, and clove. When the alcohol kicks in, toffee strawberry, red currant, sloes, tannic fruit skins, and great smokiness emerge. The smoke lasts through the finish. (1,000 bottles for the U.S.)
