This collaboration between Westward and chef and baker Ken Forkish uses the baker’s sourdough yeast in place of Westward’s usual pale ale yeast. The nose opens softly with bready aromas, sweet vanilla shortbread, and the faintest hint of spearmint. The palate is rich with toffee sweetness, toasted grains, and sweet herbs like thyme and mint. The finish has good length and the vanilla returns, mingling with toast oak, and mocha.
