This is Redbreast’s traditional single pot still whiskey, aged in sherry and bourbon casks but then finished for 10 months in virgin casks made of oak from the Ozarks. This second release in the American Oak series follows Kentucky Oak from 2022, and has a nose of honey, red apple, stone fruits, wood spices, sweet cinnamon, and cocoa powder. Honey, oak, red apple, and Oreo cookies spar with baking spices, black tea, and cinnamon bark, leaving a thrilling finish of taut, unflinching oak spices. —Jonny McCormick
