Underback
A vessel used to store
wort after it has drained from the
mash tun and before transferring it to the
washbacks for fermentation. A distillery may use the same
mash multiple times, mixing it with water of increasing temperatures to extract as much sugar as possible, draining the wort from each batch into the underback in between mashes.
