Barrel Aging on The High Seas
Jefferson’s bourbon takes a cruise on the Holland America fleet

Jefferson’s Bourbon and cruise company Holland America Line have joined forces on a whiskey project that sees cruise ships aging whiskey on their voyages around the globe. The collaboration expands the Jefferson’s Ocean Aged at Sea line and Holland America’s private whiskey barrel program: each ship in the cruise company’s fleet will carry one barrel of Jefferson’s Bourbon for 6 to 9 months of aging at sea.
The companies pledge that by the end of April, all 11 ships in Holland America’s fleet will be carrying one exclusive barrel of Jefferson’s Bourbon. The whiskeys will sail to different ports around the world, being exposed to shifting climates and ocean air, which will have a unique effect on each one’s resulting taste profile. The barrels will cruise in what Holland America Line food and beverage director Drew Foulk describes as each ship’s “floating rickhouse” before returning to Kentucky for bottling.
The companies expect each barrel to yield between 150 and 300 bottles of bourbon. Once bottled, the whiskeys will return to their respective ships in 2027 for enjoyment by Holland America Line cruise passengers. The bourbons will primarily be sold on the ships where each barrel was aged, though a small portion of the broader collection will be featured across the cruise fleet for tasting and sampling events so that customers can see how each unique aging-at-sea experience shaped its respective whiskey.
Holland America Line plans to share details about each barrel’s travels as the aging program gets underway. This will include information on each ship’s itinerary—where each barrel is traveling—as well as reports on weather patterns and varying sea and swell conditions. “The goal is to give guests a deeper connection to each barrel’s journey before it’s bottled and brought back onboard,” Foulk says. “What each barrel will ultimately taste like remains a mystery until it’s returned for bottling, which makes the wait all the more intriguing.”
Holland America Line expects to offer its Jefferson’s bourbons as neat or on the rocks pours, as well as in specialty cocktails and featured on the cruise line’s Single Barrel Series tastings. Overall, Holland America has made a big commitment to single barrel whiskeys over the last few years, expanding its offerings to nine labels in 2025 and adding roughly five additional this year. The Jefferson’s Ocean portfolio aged on Holland America ships will further boost that program when it launches in 2027.
Standout offerings on the cruise line’s 2026 Single Barrel Series lineup include bourbons from Weller Full Proof, Blanton’s, Elijah Craig, Kentucky Peerless, 1792 Bottled in Bond, Angel’s Envy, Uncle Nearest, Woodford Reserve, and Knob Creek, as well as a couple of WhistlePig ryes, a Knob Creek rye, and a Westland American single malt. Select guests on Holland America Caribbean sailings can also sample private barrel rum from Foursquare Rum Distillery in Barbados, while passengers on Latin American voyages can enjoy single barrel tequilas from Corazón, including reposado, añejo, and extra añejo expressions aged in former Weller bourbon barrels.
The original Jefferson’s Ocean Aged at Sea release is a blend of straight bourbons that traveled aboard ships spanning the globe, including both cold and warm-weather destinations. It has since been joined by specialty Jefferson’s Ocean releases like rye, cask strength, wheated, and New York edition, the latter of which was cut to proof using New York water and bottled in Manhattan.
