Highly anticipated bourbons from Heaven Hill, a 15 year old Glenrothes, collectibles from The Dalmore, and more new whisky to explore this week

Heaven Hill’s Grain-to-Glass bourbon returns after its successful debut last year, which also featured a rye and wheated bourbon. Thus far, the 2025 edition includes only the bourbon, with the other two labels in the trio due out later in the year. Elsewhere in bourbon, Old Fitzgerald’s Spring Edition is right on time this year, in contrast with some previous years where this seasonal release was delayed by a few months, and Chattanooga Whiskey has a 2021 vintage bottled in bond expression. In scotch, Speyside distiller Glenrothes has a new 15 year old, which joins the permanent portfolio, while Dalmore is out with a new Luminary expression. From the Lowlands, the innovative InchDairnie Distillery has two new expressions, both flying under the KinGlassie name.
Heaven Hill Grain-to-Glass Kentucky Straight Bourbon (2025 Edition)

The second edition of Heaven Hill’s grain-to-glass bourbon—a follow-up to the 2024 release that secured the No.-5 position on our Top 20 list last year is here. In making the whiskey, Heaven Hill continued its partnership with Indiana-based retail seed company Beck’s Hybrids, and once again landed on a mashbill of 52% corn, 35% rye, and 13% malted barley. Unlike the inaugural release, however, this edition features corn varietal Beck’s 6225, which was grown by Peterson Farms in Nelson County, Kentucky. The whiskey aged for 6 years at Heaven Hill’s Cox’s Creek rickhouse.
In tandem with the second release of the Grain-to-Glass straight bourbon, Heaven Hill has announced the launch of Family Farms First, a new initiative created in partnership with nonprofit Farm Rescue and aimed at supporting family-owned farms. As part of the initiative, a portion of every sale of Grain-to-Glass (up to $100,000 annually) will be donated to Farm Rescue. Over the last 20 years, Farm Rescue has assisted over 1,000 farm families across eight states.

Each spring, albeit with delays in some years, Heaven Hill delivers a new Old Fitzgerald bottled in bond bourbon. This latest release was distilled in the spring of 2016, making it 9 years old—among the younger releases in the Old Fitzgerald line, which at times has featured whiskey as old as 19 years. If you can’t get your hands on a Spring release, there’s always a Fall edition to look forward to.

Chattanooga has unveiled this year’s first vintage-dated blend in its Bottled in Bond Vintage Release Series. The label touts the liquid as seasonally focused due to its bottled in bond designation, and also introduces a new mashbill to the mix. Like the last vintage, this one is comprised of three mashbills. The new mashbill, SB078, comprising 20% of the blend, was named after the 78th barrel filled at the company’s Experimental Distillery in Chattanooga. The label is known for its high-malt bourbons, so it's no surprise that SB078 features several types of malted barley, including Belgian-made chocolate, double-roasted caramel, and a cherrywood-smoked varietal. Of the two other two mashbills, one is a wheated mashbill making up 50% of the total, while the remaining 30% is a mashbill composed of yellow corn and honey malted barley, a staple recipe for the flagship 111 and 91 bourbons. The liquid was then separated into two batches and aged in 10 toasted and charred barrels.
Production took place exclusively at Chattanooga’s two locations. Riverfront Distillery in the heart of Chattanooga opened in 2017, while the Experimental Distillery, Chattanooga’s first location, is a mile and a half away. It’s home to the Experimental Batch Series, which recently released the Pre-Prohibition style bourbon, made up of Hard Endo corn, and heritage-styled malts of rye, spelt, and barley.

Louisville-based Pursuit Spirits has added two new proof options to its Pursuit United bourbon and rye expressions. Originally released in 2021, the bourbon is a blend of low-rye and wheated bourbons sourced from Kentucky, New York, and Tennessee. The Kentucky-distilled component comes from Bardstown Bourbon Co. and has a mashbill of 78% corn, 12% barley, and 10% rye. An undisclosed Tennessee distillery’s portion is made from a mashbill of 80% corn, 10% rye, and 10% malted barley. New York’s Finger Lakes Distilling brings the wheated parcel to the blend (70% corn, 20% wheat, and 10% malted barley).
The rye, originally launched in 2022, is a blend of three mashbills from two distilleries: Bardstown Bourbon Co. (95% rye and 5% barley) and Maryland’s Sagamore Spirit contribes two mashbills (95% rye and 5% malted barley; 52% rye, 43% corn, and 5% barley).
Alongside the original 54% abv bottlings, the bourbon and rye are also now available at a low-abv option, bottled at 44%, and a barrel proof expression (59.9% for the bourbon and the rye at 60.6%). In addition to the two new proof points, the Pursuit United label has undergone a redesign.

Speyside distiller The Glenrothes has added to its permanent portfolio with a 15 year old single malt. Aged in custom-made and sherry-seasoned European oak casks from Spain. Glenrothes 15 will be available throughout the U.S., as well as online at Reserve Bar. The new single malt joins 18 and 25 year olds in Glenrothes' core lineup.

The Dalmore has released its latest Luminary single malts, part of a series created in partnership with Scotland’s V&A Dundee design museum back in 2021. For the third Luminary chapter, Dalmore tapped architect Ben Dobbin, a British-born architect who’s known for such notable projects as Apple Park in California, the Transamerica Pyramid in San Francisco, and The Gherkin building in London.
The more widely available of the two, the 17 year old The Collectible, started its maturation in bourbon barrels before being finished in a combination of casks, including 1989 and 1999 calvados, matusalem sherry, apostoles sherry, red wine casks from Bordeaux and Châteauneuf-du-Pape, and American white oak. There are 20,000 bottles of The Collectible available worldwide, allocated to luxury and specialist retailers, and global Travel Retail. The other release, The Rare, is a far more exclusive offering, available solely at a Sotheby’s auction slated for this summer. Coming in at 52 years old, The Rare was aged in bourbon barrels and then finished in a variety of casks, including those that held vintage 1980 calvados, 1940 colheita port, 40 year old Pedro Ximénez sherry, tawny port, and red wine from Mont Redon.
The Rare is accompanied by a Dobbins-created bronze sculpture that features asymmetric lines and curves, operating as a sort of alloy chariot that suspends the whisky in space. Just one sculpture and bottle will be available at auction, with all proceeds from said auction going toward the V&A Dundee. While just the one will be sold, three were produced—one (with accompanying sculpture) will be displayed at The Dalmore, and the final bottle will go into the distillery’s archive. Since launching the Luminary series, Dalmore has donated over £200,000 to the V&A Dundee.

InchDairnie Distillery, the pioneering maker of RyeLaw, is releasing its inaugural single malt whiskies. Named after a village in Fife close to the distillery, KinGlassie (pronounced Kin-Glassie) is a double-distilled age-stated single malt, heavily peated to 50 phenol parts per million using peat from the Scottish mainland. There are two expressions in the initial release, both distilled in 2017. Until 2021, InchDairnie laid down peated stock for KinGlassie less than one week a year, but production has since increased.
Double Matured was initially matured in bourbon casks before spending a further 3 years in amontillado casks, while Raw was entirely matured in bourbon casks for 8 years. InchDairnie Distillery was founded in 2011 and began distilling in 2015. The versatile distillery has a hammer mill and mash conversion vessel rather than a traditional mashtun, which it says allows it to grind the grain more finely, allowing greater flavor extraction, resulting in a richer, more refined character in their whiskies compared to traditional scotch distilleries.

Glen Scotia is releasing its first-ever 50 year old as the lead expression in a new five-part series called The Elements of Campbeltown Collection. The oldest-ever Glen Scotia release is the first 50 year old single malt whisky from Campbeltown, Scotland’s smallest whisky region, since Springbank Millennium a generation ago. Distilled in 1973, it was fully matured in refill American oak hogsheads.
Glen Scotia Distillery was founded in 1832 and is owned by the Loch Lomond Group. Each subsequent release in the new series will be named after a different element—fire, water, and earth, following this inaugural release, air, which represents Glen Scotia’s signature maritime notes. Each element will take its place in the loops of a Celtic five-fold knot, the emblem of the collection, with the liquid showcasing the influence that each element has on the spirit. The box was designed by UK artist Gina Parr, who created a painting that reflects the interaction of the heavy spirit vapors with the salty sea air.
