Whisky Watch: A Single Pot Still From Jameson, Redemption Bonded, & More New Releases

Atop this week’s new releases is a single pot still whiskey from Jameson, an Irish brand that’s best known for its flagship blend. While the whiskey, which is matured in five different cask types, is brand new to the U.S., it’s not actually new to Jameson—it’s been on European shelves since 2022, and takes inspiration from a recipe written by John Jameson II back in 1826. From neighboring Scotland comes a single malt from Bruichladdich, the final expression in its trio of releases celebrating its 25th anniversary. Elsewhere, Garrison Brothers has the latest iteration of its uncut, unfiltered Cowboy bourbon, Redemption has debuted its first-ever bottled in bond whiskey, Chattanooga has introduced a blend finished in Moldovan ice wine casks, and Breckenridge has added a peach-flavored whiskey to its stable.

Jameson Distiller’s Batch Irish Single Pot Still

Jameson’s newest addition is a single pot still whiskey, not a blend, departing from its long-standing profile. There is historical precedent for this move: one of the earliest recipes in the Jameson archive is a mashbill for single pot still whiskey written by John Jameson II in 1826, when Jameson was made at Bow Street Distillery in Dublin. Fast forward 200 years, and Jameson master distiller Kevin O’Gorman has created this triple-distilled single pot still whiskey made from a mash of malted and unmalted barley at Midleton Distillery, near Cork. It’s matured in five cask types, including first and second-fill bourbon, oloroso from the Antonio Páez Lobato cooperage, and three types of virgin oak: Irish, American, and European.

Jameson Distiller’s Batch will introduce more people to single pot still whiskey, Ireland’s signature whiskey style, at a friendly price point. Originally released in Europe in 2022 as Jameson Single Pot Still, Distiller’s Batch joins other single pot still whiskeys in the Irish Distillers portfolio, including Redbreast, Spot Whiskeys, and select expressions from Method and Madness, Powers, and Midleton Very Rare.

Bruichladdich Greener Still Islay single malt

The last of Bruichladdich’s 25th anniversary celebration bottlings has arrived, following in the footsteps of Yellow Submarine III and Old Skool. Greener Still is a 15 year old unpeated single malt that’s distilled from organic, biodynamic, and bere barleys. The organic barley was grown on the Scottish mainland, the biodynamic barley was sourced from Yatesbury House Farm in Wiltshire, England—marking Bruichladdich’s sole exception to its rule of using 100% Scottish barley—and the bere barley, developed in partnership with the University of the Highlands Islands’ Agronomy Institute, was grown on Orkney. Greener Still matured entirely in first-fill bourbon casks. The whisky is the fourth addition to the distillery’s Still Series, which previously included Blacker Still, Redder Still, and Golder Still, all of which put the spotlight on the distillery’s experimental cask maturation.

The name Greener Still, as well as the combination of barleys used, is a nod to Bruichladdich’s longtime commitment to environmentally conscious practices, both at the agricultural level and within the distillery. Since re-opening the distillery 25 years ago, Bruichladdich has trialed various ways to reduce its impact, ranging from regenerative agriculture and experimentation with low-carbon biofuels to exploring renewable heating solutions. Ultimately, its goal is to eliminate its carbon dioxide emissions entirely.

Garrison Brothers Cowboy Bourbon

The 12th edition of Garrison Brothers Cowboy bourbon is here. The whiskey is among the Hye, Texas-based distillery’s most highly coveted. Year-to-year, Cowboy bourbon generally follows the same blueprint: Bourbon aged at least 8 years, and bottled at cask strength. A distillery event for the bourbon also comes around each release; this year, it’s kicking off at 8 a.m. on September 12th. There’ll be coffee, breakfast, and lunch available at the distillery’s on-site restaurant The Whiskey Shack, as well as live music, bottle signings, specialty cocktails, tastings, and tours. While there are 16,000 bottles total of this year’s Cowboy, 1,000 of those are relegated to the launch event, and another 279 will be available on the distillery’s online store starting Friday, September 18th (the vast majority will be available nationwide).

Redemption Single Barrel Bonded Bourbon

Redemption’s latest bourbon is its first bottled in bond whiskey. The new release is a Ross & Squibb-sourced distillate aged for 6 years; each barrel was hand-selected by master blender Alan Kennedy, then bottled by Redemption in Frankfort, Kentucky. The bourbon also marks the relaunch of Redemption’s Higher Marques collection, which features some of the brand’s more elevated and limited edition whiskeys (previous releases included the Cognac Cask Finish high-rye bourbon and wheated bourbon). It’ll begin rolling out next month, both in stores and reservebar.com.

Alongside the bottled in bond bourbon comes the return of Redemption’s Ancient Series 18 year old bourbon, which originally debuted last summer. When it appears on shelves once more this coming fall, it’ll have a $400 price tag, keeping it in line with last year’s release. Like the original, this is a blend of ultra-aged barrels distilled at MGP (back when it was Lawrenceburg Distillers Indiana).

Chattanooga Moldovan Ice Wine Finished Blend

Chattanooga Whiskey has unveiled the eighth entry in its Barrel Finishing Series. This one was finished in ice wine casks sourced from an undisclosed winery in the hills of Moldova overlooking the Black Sea. It’s a blend of five different malt whiskeys and one bourbon, all of which contain specialty malted grains including barley grown on the Italian coast near Venice and two varieties of malted wheat.

Ice wine is a relatively rare style of wine because it requires certain weather conditions. It’s produced from grapes—typically white, but sometimes red—that are frozen on the vine and pressed without being thawed, yielding a very concentrated and sweet wine that’s rife with notes of honey, lychee, stone fruits, and bright citrus. Ice wine casks are quite rare in the whisky world, but a handful of distillers use them to craft decadent, dessert-like drams. Examples include Barrell Craft Spirits, Two Stacks, Writer’s Tears, and Glenfiddich 21 Winter Storm.

Breckenridge Peach

The second flavored whiskey from Colorado’s Breckenridge Distillery takes inspiration from the state’s late-summer harvest, when peaches ripen by the thousands. The new release begins with a base of 5 year old Breckenridge—instead of proofing the whiskey down solely with water, locally sourced Palisade peach juice is also incorporated. According to master distiller Hans Stafsholt, this allows the peach flavors to more fully integrate with the bourbon’s notes. Breckenridge Peach is currently available at Colorado retailers; it'll go nationwide this fall.

Breckenridge first dabbled in flavored whiskey in 2025, when it released a honey-infused limited edition variant in collaboration with the Denver Broncos NFL team. That was followed by a permanent Honey whiskey earlier this year, also infused, but with Goldswarm raw honey from Nigeria.
