Kavalan Distillery has a new release to tempt sherried whisky lovers. Triple Sherry Cask is composed of Kavalan single malt whiskies aged in oloroso, Pedro Ximénez, and moscatel casks. The Taiwanese distillery, which will be 20 years old next year, is known to invest in top-quality sherry casks. This is the first new release since Kavalan brought its cask strength single cask releases back to the U.S. at the end of 2023. Bottled at 43% and priced at $100, Kavalan Triple Sherry Cask is fully matured in the individual casks before being brought together in marrying vats to allow the whiskies to integrate. The combination of white, red, and gold on the packaging is designed to reflect the colors of new make spirit, whisky, and sherry.
Kavalan is situated in Yilan County on the northeast coast of Taiwan and experiences a subtropical climate and high humidity. The whisky is designed to exploit these conditions to reach peak maturation in a comparatively short period of time, though this is only achieved at the expense of a high angels’ share. Kavalan has three multi-floored warehouses, but the conditions mean the turnover is much faster than warehouses in cooler parts of the world, and fewer warehouses are needed. They store their finest sherry casks on the top floors, where the wood experiences the highest temperatures. While Kavalan has released high-scoring single cask expressions matured in oloroso, Pedro Ximénez, and moscatel casks before, this is the first time they have combined whiskies aged in these casks together in a single expression.
